v-day has never been a big deal to me. when we were kids, my father would always leave a rose and a chocolate bar at all of the family's kitchen seats when he came home at midnight. even through high school, and the age of awful relationships, valentines day was never too terrible of a disaster, because us kids already knew that someone cared ....
and that we totally already got chocolate.
so this is honey's 6 days early valentines day breakfast in bed, it came out so good i may have to make it again next week. <3
NOTE: this recipe was wonderful with honey rather then maple syrup...i also used honey because it is more medicinal and the husband had a cold. if you prefer maple syrup that would be delicious as well.
Peanut Butter and Banana Stuffed French Toast
2 Slices of your Favorite Bread (I used Myers Italian) 1 Tablespoon Cinnamon 1 Egg 2 Tablespoons (or More!) Peanut Butter 1 large Banana butter for frying Honey and Powdered Sugar (for serving) Optional: Mini Chocolate Chips | Take your two slices of bread and spread 1 Tablespoon of Peanut Butter on each slice. i used extra crunchy. you could also scatter some chocolate chips here if you wanted. next slice the banana in thin slices and cover the peanut butter completely. mush the two halves together and pinch the ends of the bread a tad to help keep everything in. now take your egg and break it in a shallow dish, wide enough to hold the assembled sandwich. whisk your egg with the cinnamon and then lay the sandwich in the egg mixture and coat on all sides. let the sandwich sit a bit on each side to soak up most of the egg eat a good old fashion cast iron pan to medium. melt butter on the pan and then add the PB&B Sandwich. i like to pour the excess egg over the top. grill on all sides, pressing down on the bread to compact the sandwich and hold it together. once the top and bottom have been thoroughly cooked, delicately use your spatula to hold the sandwich on ends and get the crust crispy lay the sandwich on a plate on top of any extra banana slices you had. drizzle with honey and dust with powdered sugar.
