originally when i heard that our dear friend Tommy (God Bless His Soul) had passed after a long battle with ALS, i decided to pick up the ingrediants after work and make a pan to send over to his family. when i returned home, i found out that he family could not take anymore food as was beginning to give it away.
at this point we were right before christmas, and i already had the ingrediants, so when i found myself (suprisingly) caught up on christmas eve. this girl decided to make a lasagna for christmas day.
to this effect i like to think of it as a gift from Tommy to my family on Christmas Day, it kept me thinking of him and was a special treat. Love you Tommy!
1/4 lb Monterrey Jack 48 oz Ricotta Cheese 1 lb Mozzarella Cheese 1 Cup Parmesan Cheese 6 Eggs 1 Table Each : parsly, Garlic power, Basil NOODLES 1 lb Lasagna Noodles 1 tea Salt MEAT SAUCE 1 lb Ground Beef Olive Oil 1 Onion, Minced 4 Cloves Garlic, Minced 1 28 oz Can Crushed Tomatoes 1 28 oz Can Tomato Paste 4 bay leaves 1 Table each :parsley, thyme, garlic, onion, black pepper, salt, basil, oregano 1/2 Cup Parmesan Cheese | add olive oil to a pan and heat, add ground beef and brown, add minced onions and garlic until softened, add both cans of tomatoes, spices and bay leaves simmer for 2-4 hours. add Parmesan Cheese, and adjust seasonings to taste. Boil Lasagna Noodles in salted water, following the bow directions. lay noodles out flat on wax paper to dry and pat with a paper towl before using. excess moisture in the noodles leads to a soggy/watery lasagna, so this is an important step. while noodles are boiling grate mozz and mix all ingrediants to the cheese sauce. take a lasagna pan (i prefer to buy aluminum. dispoable pans at the dollar store. lasagna is enough work without pans to scrub!) spread the bottom of the pan with a thin layer of sauce, top this with the very dry noodles (i used paper towels to pat them down) then follow the noodles with a layer of cheese sauce. continue to layer sauce, noodles, cheese until you reach the top of the pan. this recipe will fill either two shallow lasagna pans or one deep lasagna pan. i prefer to use the deeper because it really creates the 'WHOA' effect of a towering slice of lasagna. Bake the Lasagna in the oven for 45 Minutes until the top is browned, melted, delicous and crispy. enjoy, and dont worry about making anysides....a salad is more then enough to compliment |
