the problem is that a feast normally takes
time....
and planning .....
and half a brain. .....
after 8 hours of work i usually lack 2 if not all 3 of those things and the only food that might end up on the plate is a pork chop with leftover mashed potatoes. So, to combate this main-dish only syndrom i seem to be suffering, I am trying to incorperate easy sides into my recipe collection. things that can be done quickly and without much planning, but yet, still round out the meal. These sides are still made in a larger batch so they can be used couple times throughout the week, so for a smaller batch, half the recipe.
Mexican Cheesy Rice
2 Cups Par Boiled Rice 4 Cups Water 1 Tablespoons Each: Garlic Powder, Onion Salt, Paprika, Red Pepper Flakes, Black Pepper 2 Teaspoons Salt 1 Green Pepper 1 Red Pepper 1 Yellow Pepper 1 Yellow Cooking Onion 1 1/2 Cups Shredded Sharp Cheddar | Place rice, water, and seasonings in a microwave safe bowl (i prefer my large pyrex measuring cup) and top with a plate. place in the microwave on high for 15 minutes or until half of the liquid has evaporated. Mince peppers and onions while the rice cooks halfway, open microwave and dump the veggies into the rice mix. replace lid and microwave on high for 15 minutes, until all but 1/4 cup of the liquid is gone. microwave powers vary, so gauge this to how your normally cooks rice. remove lid, grate in the sharp cheddar, mix wall and serve. |
