1 1/2 lb Bacon Ends 1 Onion Diced 5 teaspoons Tabasco 2 Teaspoons Black Pepper Salt to taste 4 Cups Chicken Broth 2 cans Black Eyed Peas 2 Cups Rice New Years Day 3 Eggs Butter for Frying |

throw all ingredients, except peas, and rice, into a pot and simmer 1 hour. add peas, simmer 1/2 longer. add rice and simmer 1/2 hour or until the liquid is absorbed and the rice tender. Eat with Greens and Copious amounts of booze. New Years Day Heat butter in a cast iron skillet, add Hoppin' John and warm. when slightly browned. add eggs to pan. fry one minute, salt and pepper, flip and fry one minute longer. serve over Hoppin' john. feast with the vigor of a hangover that has smelled bacon cooking for the last 2 days |
